Toffee



1 pound SALTED butter
2 cups granulated sugar
2 TBS water
6 ounces semi-sweet chocolate, chopped
2 cups chopped toasted nuts, optional

1. Wrap jelly roll pan with foil and set aside.

2. Melt butter in medium saucepan over medium heat. Pour sugar into butter. Add water onto top of sugar pile, making sure it stays on the sugar and not in the butter. Whisk until well combined and mixture thickens.

3. Switch to wooden spoon and stir continuously over medium heat until mixture reaches approximately 317 degrees on candy thermometer and is the color of a brown paper bag.4. Pour candy onto prepared baking sheet. Sprinkle chopped chocolate onto toffee and let sit for a minute. As chocolate melts smooth it out with knife or spatula. Sprinkle nuts on if using.5. Place in refrigerator or freezer until candy has cooled and set about 30 minutes to 1 hour. Break into desired size pieces and store in airtight container.
