8 white corn tortillas (6-inch diameter)
6 large eggs
¾ cup corn kernels
½ cup shredded cheese (cheddar, pepper-jack, Monterey jack)
½ cup prepared salsa
2 scallions, chopped (optional)
Pinch of salt
Heat oven to 400 degrees. Coat 2 baking sheets with nonstick cooking spray. Place 4 tortillas on each baking sheet and spray with cooking spray. Bake at 400 for 10 minutes.
In a large bowl, whisk together eggs, corn, ¼ cup of the cheese, ¼ cup of the salsa, half of the scallions and salt.
Heat a large nonstick skillet over medium-high heat. Coat with cooking spray. Add egg mixture and cook, stirring, until eggs are firm, about 4 to 5 minutes.
To serve, place about ¼ cup of cooked egg mixture on top of each tortilla. Sprinkle each with remaining cheese and scallions. Serve additional salsa on the side.
*Can also serve with sour cream-very good!
